Chekek Kuru Curry is a popular dish in South Indian cuisine, originating from the state of Karnataka. It is made with the seeds of ripe jackfruit, which are known as Chekek Kuru in Kannada language.

In a pressure cooker, add the chopped jackfruit seeds, salt, 1 cup of water and pressure cook for 3-4 whistles.
In a separate pan, heat oil and add mustard seeds, cumin seeds and curry leaves. Once they start to crackle, add chopped onion, green chillies, ginger and garlic. Cook until the onions are soft and translucent.
Add chopped tomatoes and cook until they are soft and mushy.
Add coriander powder, cumin powder, turmeric powder, red chilli powder and sugar. Mix well.
Add the cooked jackfruit seeds to the pan and mix well.
Add water as required and let the curry simmer for 5-7 minutes.
Turn off the heat and add lemon juice. Mix well.
Serve hot with rice or roti, garnished with fresh coriander leaves (optional).
