Pandi Curry Rice ( Rice With Kodava Style Pork Curry )
Pandi Curry Rice is a popular dish from the Kodava cuisine, made with tender pork and a flavorful sauce made from spices and coconut. Here is a recipe for making Pandi Curry Rice:
Ingredients:
- 500g of pork, cut into bite-sized pieces
- 2 large onions, chopped
- 4 green chilies, sliced
- 4 garlic cloves, minced
- 1 inch ginger, minced
- 1 cup of grated coconut
- 1 tsp of cumin seeds
- 1 tsp of coriander seeds
- 1 tsp of fennel seeds
- 2 dried red chilies
- 1 tsp of turmeric powder
- 1 tsp of red chili powder
- Salt to taste
- 2 tbsp of oil
- Rice for serving
Instructions:
In a blender or food processor, grind the grated coconut, cumin seeds, coriander seeds, fennel seeds, dried red chilies, turmeric powder, red chili powder, salt, and enough water to form a smooth paste.
In a large pan, heat the oil and add the chopped onions, green chilies, garlic, and ginger. Cook until the onions are translucent.
Add the pork to the pan and cook until browned on all sides.
Pour the coconut paste into the pan and mix well.
Add enough water to the pan to form a thick sauce and bring to a boil.
Reduce the heat to low and let the sauce simmer for 30-40 minutes, or until the pork is fully cooked and tender.
Serve hot with steamed rice.
