In a pan, heat oil and add mustard seeds and cumin seeds. Once they start to crackle, add chopped onion, green chillies, ginger-garlic paste, salt, and curry leaves. Cook until the onions are soft and translucent.
Add chopped tomatoes, red chilli powder, coriander powder, cumin powder, and turmeric powder to the pan. Mix well and cook for a few minutes until the tomatoes are soft and mushy.
Add the chopped raw jackfruit to the pan and mix well. Cover the pan and cook for about 10 minutes, or until the jackfruit is tender and soft.
Add the coconut milk to the pan and bring to a simmer. Cook for a few minutes until the sauce has thickened slightly.
Turn off the heat and garnish with fresh coriander leaves (optional).
Serve hot with rice or roti.
