Pandhi Barthad ( Pork Roast )
Pandhi Barthaad is a popular and delicious Kodava style pork dish. Here is a recipe for making Pandhi Barthaad:
Ingredients:
- 1 kg of pork belly, cut into bite-sized pieces
- 4 onions, chopped
- 4 garlic cloves, minced
- 1 inch ginger, minced
- 2 green chilies, sliced
- 1 tsp of turmeric powder
- 1 tsp of red chili powder
- 1 tsp of coriander powder
- Salt to taste
- 2 tbsp of oil
- 1 cup of water
- 1 cup of grated coconut
- 2 cups of coconut milk
- 2 tbsp of oil
- A handful of curry leaves
- 2 tsp of mustard seeds
Instructions:
In a blender or food processor, grind the grated coconut, ginger, and green chilies to form a smooth paste.
In a large pan, heat the oil and add the chopped onions, garlic, and the ground paste. Cook until the onions are translucent.
Add the pork pieces to the pan and cook for a few minutes.
Add the turmeric powder, red chili powder, coriander powder, and salt to the pan and mix well.
Pour in the coconut milk and water and bring the sauce to a boil.
Reduce the heat to low and let the sauce simmer for 45-60 minutes, or until the pork is fully cooked and tender.
In a separate pan, heat 2 tbsp of oil and add the mustard seeds. When the seeds start to crackle, add the curry leaves and pour the mixture over the pork curry.
Serve hot with steamed rice.
