Soak the rice, urad dal, and fenugreek seeds in water for 6 hours. Drain and grind to a smooth batter using a little water. Add salt to taste.
Cover and ferment the batter for 8-10 hours.
In a pan, heat the oil and add the cumin seeds. When they begin to crackle, add the onions, green chillies, and ginger-garlic paste.
Cook until the onions are soft, then add the chicken and cook until it is fully cooked.
Add the coriander powder, red chilli powder, garam masala, and salt to taste. Cook for a few more minutes until the spices are well combined.
Stir in the chopped coriander leaves and remove from heat.
Heat a non-stick griddle or tawa, and spread a ladleful of batter into a thin, circular shape.
Spoon the chicken mixture over half of the dosa, and fold the other half over to form a semi-circle.
Cook until golden brown on both sides, and serve hot with chutney or sambar.
